Surf and Turf (Lobster and NY Strip)
20 mins prepServes 2
A classic surf and turf recipe featuring succulent poached lobster tails in a rich butter sauce with garlic and herbs, paired with perfectly seared New York strip steaks finished with butter, garlic, and thyme. Ideal for a special dinner for two.
For the Lobster:
In a fry pan, add 1/4 cup water and 3 tablespoons of butter. Stir until combined, then add the rest of the butter. Once all the butter is melted, add the smashed garlic, chopped chives, lemon juice, cayenne pepper, a pinch of salt, pepper, and tarragon sprigs. Bring the mixture to a simmer. Place the lobster tails in the pan and baste them continuously until the meat is no longer translucent.
Save any leftover butter sauce for dipping.
For the Steak:
Salt and pepper your NY strip steaks and let them sit for 30 minutes at room temperature. Heat oil in a cast iron pan until hot. Sear the steaks for four minutes on each side (adjust searing time based on your preferred doneness). Add butter, garlic, and thyme to the pan and baste the steaks during the last few minutes of cooking. Once cooked to your liking, remove the steaks from the pan and let them rest for 5 minutes before serving.
